If you’re looking for the perfect weekend breakfast treat, look no further! These blueberry scones are easy to make and will have the whole family asking for more!

Scones are so nostalgic for me; growing up, every time I would have my girlfriends sleepover, my mom would run to the nearest Panera or Target to grab a box of scones for the morning. While it may not have been the best on our blood sugar, it made great memories!

While these aren’t the same gluten-filled, sugar-stuffed ones that I had as a kid, they’re just as special. I can’t wait to make a batch of these for my kids when their older so they can make their own scone-filled memories ☺️

Blueberry Scones

Blueberry Scones

Ingredients

  • 1 1/2 cup almond flour
  • 1 scoop collagen (optional)
  • 1/2 cup arrowroot starch
  • 1/2 cup sprout living protein (code: alittlemorebalanced)
  • 3/4 tsp baking powder
  • 1/4 cup pistachio or almond milk
  • 2 tbsp coconut oil or ghee melted
  • 3 tbsp nut butter of choice
  • 2 tbsp coconut sugar
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 350F and add everything into a bowl.
  2. Form into a ball then press down and cut out scone shapes.
  3. Spread scones out on a baking pan and bake for 25-30 minutes or until browned.
  4. I topped mine with a pb + protein powder mixture to add extra protein!
  5. Enjoy!!
