If you have been following me for a while, you know that I take my liver health VERY seriously. Since I was a baby, I have had Gilbert’s Syndrome, which is pretty much where my liver does not process bilirubin correctly, and I get jaundice very easily. Before my holistic healing journey, my jaundice was so bad that people would notice the yellowing of my eyes or skin every day. This led to so much embarrassment in my childhood because no doctor helped me to understand what was happening inside my body.

But since becoming sick and healing my body, I have taken my liver health extremely seriously. Everything that happened to me made it hard for my liver to process things, so i’ve made sure to not only support my liver with supplements, but also food as well. Let’s dive into the ingredients in this liver-loving salad I make weekly for years:

Beets: Beets, with their natural compounds like betaine and antioxidants, contribute to liver health by aiding in detoxification processes, promoting bile flow, and supporting optimal liver function.

Green Cabbage: Green cabbage, abundant in sulfur compounds and antioxidants, offers liver-supportive benefits by assisting in detoxification, promoting liver function, and providing vital nutrients for overall liver health.

Carrots: Carrots, rich in antioxidants and phytochemicals like beta-carotene, aid in liver health by supporting detoxification processes, promoting bile production, and offering nourishing nutrients for optimal liver function.

Cucumbers: Cucumbers, being hydrating and rich in antioxidants, assist in liver health by promoting hydration, aiding in detoxification, and providing essential nutrients that support optimal liver function.

Celery: Celery, known for its high water content and antioxidants, supports liver health by aiding in detoxification, reducing inflammation, and providing essential nutrients that contribute to overall liver function.

Lemon Juice: Lemons, with their high vitamin C content and natural detoxifying properties, support liver health by promoting the production of liver enzymes, aiding in detoxification processes, and providing antioxidant support for optimal liver function.

As you guys can see, this salad is all over liver goodness! I am a huge fan of making this to support my liver and detox pathways, and it can also aid in a fiber-rich starter to a meal to help keep your blood sugar balanced!

Liver Loving Salad

This high-fiber, nutrient-rich salad is the perfect way to start every meal!

Ingredients

Salad
  • 1 head green cabbage
  • 4 carrots
  • 3 mini cucumbers
  • 2 raw beets
  • 3 stalks celery
Dressing
  • 1 lemon
  • 1 tsp ACV (optional)
  • 1 tbsp dijon mustard
  • 1 tbsp olive oil

Instructions

  1. Shread all of your ingredients for the salad minus the cucumbers using a cheese grater (slice these). Toss them all in a bowl and mix together.
  2. Create the dressing in a separate bowl and pour on top; mix together and store in an air-tight container or mason jar for 4-5 days.
