strawberries & cream popsicles

Summer is all about savoring refreshing treats, and what could be better than homemade popsicles? In this blog, we're going to explore a delightful recipe for strawberries and cream popsicles that will satisfy your sweet tooth and keep you cool on those scorching summer days. The best part? You only need three simple ingredients: strawberries, coconut cream, and coconut milk. Get ready to indulge in the creamy, fruity goodness of these homemade popsicles!

Step 1: Preparing the Strawberries

Start by washing the fresh strawberries thoroughly. Remove the stems and chop them into small pieces. If you prefer a smoother texture, you can blend the strawberries in a food processor or blender until smooth. This step allows you to customize the texture of your popsicles according to your preference.

Step 2: Mixing the Ingredients

In a bowl, combine the chopped strawberries, coconut cream, and coconut milk. Gently stir the mixture until well combined. If desired, you can add a touch of sweetness by incorporating a tablespoon of honey or maple syrup. Remember, though, that the natural sweetness of the strawberries is often sufficient.

Step 3: Filling the Popsicle Molds

Carefully pour the strawberry and cream mixture into the popsicle molds, leaving a small space at the top for expansion during freezing. If your molds don't have built-in sticks, insert popsicle sticks into the molds. Alternatively, you can cover the molds with plastic wrap and insert the sticks through the plastic wrap, ensuring they remain upright.

Step 4: Freezing Time!

Place the filled popsicle molds in the freezer and allow them to freeze for at least 4-6 hours or until completely solid. It's best to leave them overnight to ensure they're fully set.
