Ingredients

Crust
  • 1 cup raw cashews
  • 1/2 cup shredded coconut
  • 1/4 cup almond milk
  • 1 scoop protein (optional)
Cheesecake Filling
  • 1 1/2 cup raw cashews soaked overnight
  • 1/2 cup coconut cream
  • 2 tbsp coconut sugar
  • 1 tsp monkfruit powder (optional)
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla
Blueberry Cream
  • 1 cup fresh blueberries
  • 2 tbsp coconut sugar
  • 1/4 cup soaked cashews
  • 1/4 cup coconut cream

Instructions

  1. Line a 8x8 or 8x10 pan with parchment paper and set aside

  3. Add crust to your pan and let sit. Next, create your blueberry cream filling by adding all ingredients to your blender.
  4. Add blueberry cream filling on top of crust and repeat steps for the cheesecake.
  5. Freeze for 2 hours-overnight and enjoy! Keep frozen for up to 6 months.
